Be prepared to have your mind blown.
- Roasted and mashed yams
- Pepper jack cheese
- Green onions
- Roasted pumpkin seeds
- Roast your yam in the oven (or microwave it for faster consumption)
- Mash the cooked yam
- Add the cheese, green onion, and pumpkin seeds to the mashed mixture - it's best to do it when the yam is still hot so that the cheese gets all melty and yummy
- Spread the mixture over a tortilla, add another on top (for a large quesadilla) or simply fold it in half (for a smaller quesadilla)
- Fry it on medium heat in frying pan
- Serve with salsa
